Hitokuchi Castella
Japanese notation "一口かすてら(釣鐘屋本舗)"
Tsuriganeya Honpo, a long-established shop established in 1900 in Naniwa-ku, Osaka City, makes “Hitokuchi Castella” (bite-size pancake). Tsuriganeya Honpo’s signature product is “Tsurigane manju” a manju shaped like a bell, and this bite-sized Castella is also in the shape of a bell, so it looks like a series product.
On the back of the package, there is a description of Tsuriganeya Honpo’s specialties regarding “dough”. It is called “Nekase-Kiji” which means that the dough has to be matured for a day and a night before it is used.
A lot of cute sponge cakes appeared. These bite-sized sponge cakes are in the shape of a “Tsurigane (bell)” which can be said to be the identity of Tsuriganeya Honpo.
It is small but firmly shaped like a fishing bell.
Compared to ordinary Castella (sponge cakes), it is more elastic and chewy. The slightly sweet, rustic flavor is well-balanced, and you can’t help but eat them one after another.
