Ajari-Mochi
Japanese notation "阿闍梨餅"
”Ajari-Mochi” is the signature product of the Japanese confectionery store “Mangetsu” in Kyoto City, and is also a very well-known confectionery in Kyoto. Although it is too famous, I actually had it for the first time about three years ago and was surprised at how delicious it was.
It looks like a pancake, but this shape is said to be based on the “Ajirogasa” hat worn by the monks who perform ascetic training, which is the origin of the name “Ajari Mochi”.
The most distinctive feature of “Ajari Mochi” is its dough. It is chewy yet very fragrant, like a top-quality pancake, but at the same time, it is a Japanese confectionary that is a perfect match for the azuki red bean paste inside. The sweetness is light yet well-balanced, and the degree of perfection is astonishing.
It has an elegant taste that lingers in the mouth. However, perhaps because it is a semi-perishable confectionary, the shelf life is only 5 days from the time of manufacture, so be careful when giving it as a souvenir. But anyway, I think it is a stable taste that anyone can enjoy.
