Dorayaki(Ebiya)
Japanese notation "どら焼き(海老屋)"
“Ebiya” in Kofu City, Yamanashi Prefecture, is a confectionery shop that was established in 1949 and has continued to make a variety of confections. When it was first established, the store mainly made boiled beans, yokan (bean jelly), and tsukudani (food boiled down in soy), but now it is a confectionery shop with a diverse lineup including Japanese and Western cakes.
This time, I bought “Dorayaki” from “Ebiya”. The words “Established in 1949” are printed in large letters on the package.
It has a standard appearance and shape, but the texture of the dorayaki crust is firm and delicious.
It seems to be a dorayaki that has stuck to the standard style.
The sweet bean paste inside is not too sweet and has an elegant taste. The crust has just the right amount of sponge cake texture, and I felt a nostalgic, or perhaps, royal style of Dorayaki.
