Sio-Dorayaki

Moroeya, a confectionery shop in Kanazawa City, Ishikawa Prefecture, is a very long-established business founded in 1849, and has been making traditional Japanese confections in Kanazawa for over 150 years.
The salt production in this area has been famous since the days when Kanazawa City in Ishikawa Prefecture was called “Kaga”. At that time, it was the largest salt-producing area in Japan.
Two dorayaki made in the shape of a half-moon are neatly arranged in a row.
It is a small dorayaki, but the texture of the dough is of high quality and looks delicious. It is nice that there are two of this size in the package.
The red bean paste seems to contain traditional Kaga coarse salt.
I see that the salt is there to maximize the flavor and sweetness of the azuki bean paste. The taste was calculated to bring out the sweetness of the slightly sweetened azuki red bean paste. It was a very skillful dish, as one would expect from a confectionary shop in Kanazawa.
