Shoyu-mochi (Ichiroku-honpo)
Japanese notation "一六名物しょうゆ餅"
I bought “Shoyu Mochi” made by Ichiroku Honpo in Matsuyama City, Ehime Prefecture. This confectioner is famous for its “Ichiroku Tart“. The shape of this soy sauce rice cake is unique and interesting, and is made by twisting a stick-shaped rice cake. It is said to be a confectionery that has been made since the Ichiroku Honpo’s establishment, and has been made for more than 130 years.
The rice cake is glossy and has a raw texture, but because it is made of rice flour, it is soft, shiny, and very chewy.
The seasoning is sweet and spicy, like a rice cake that can be eaten as a snack. It seems that dark soy sauce is used, which gives it a characteristic sweetness and richness. It seems to contain a lot of ginger and has a strong ginger aroma.
The rice cake is transparent, chewy, and has a strong stickiness. It has a ginger flavor and a simple, nostalgic taste. I thought it was the perfect snack when I was hungry.
