Zunda An Shio Daifuku

Mochi daifuku filled with plenty of homemade zunda paste

The “Zunda An Shio Daifuku”, Salted Daifuku with Zunda Paste,  is made by Onuma Seika in Miyagi Prefecture.  Zunda, sweetened edamame is one of local specialties there.  The confection includes plenty of Zunda paste and wrapped with the salted mochi.

“Zunda” is a regional dish in the Tohoku region—a green paste made by grinding edamame (immature soybeans) or fava beans. It is widely enjoyed throughout the Tohoku region, and in Yamagata Prefecture, it is often called “jindan.”

Both the top and bottom are toasted to a golden brown. It’s a cute size, but it feels quite heavy.

Plenty of fresh Zunda paste is filled in and it is not just moist, but actually quite juicy, with a high moisture paste.

It’s generously filled with zunda paste, which has a light, refreshing sweetness and retains just the right amount of the beans’ texture. The lightly toasted mochi in brown has a pleasant, toasty aroma. This daifuku lets us enjoy fresh zunda paste with its beautiful green color.
