Exquisite combination of branded salt and chicken egg cracker
The Keiran Shio Senbei, Salted Egg Rice Cracker made by Fukagawa Poultry, a chicken farm in Nagato City, Yamaguchi Prefecture, is the salty version of the “Egg Rice Cracker” that is a staple among residents there. “Egg Rice Cracker” is sold in supermarkets and other stores throughout Yamaguchi Prefecture and is said to be a staple among locals, and since these are the salty version of the castella-flavored rice crackers, it sounds raising my curiousity what it tastes like.

The “Peasant’s Salt” used here is produced in the Aburaya Bay area on the Sea of Japan coast of Yamaguchi Prefecture. It is said to be a salt with a mineral balance similar to that of seawater, produced using a special technique called “jigaeshi.”

The texture is light and airy, feeling with a very delicate mouthfeel and a fresh, eggy flavor. While it may contain less honey than typical egg cracker, this allows the simple, natural flavors of the flour and eggs to really shine through.
