Many confectioners there make this historic tart, and now we can enjoy lineups of various flavors, and  Kamei Seika’s Shikoku tart is the so-called authentic style, using yuzu-flavored bean paste.

In the early Edo period (1603-1867), Sadayuki Matsudaira, the lord of the Matsuyama domain, was captivated by sponge cakes rolled with jam brought by the Nanban trade, and had them made into similar sweets using yuzu, a familiar citrus fruit, which is said to be the origin of the famous tart sweets of the Shikoku region.

It is filled with plenty of fairly large chopped chestnuts.

The fluffy sponge cake and yuzu-flavored koshi-an (sweet bean paste) are classic delicacies. It might fun to compare Shikoku tarts from different stores.
