“Shell Reines” series made by Blanca in Toba City, Mie Prefecture, is a madeleine shaped of pearl oysters, a well-known specialty of Ise-Shima. They are known for their delicious taste, and “Shell Rene Salt” is available only for summer season.
I have personally enjoyed the plain flavor many times, and the salted flavor is a little hard to imagine.
It looks no different from their regular Shell Reines.
I am always impressed with the uniformity of the baking process despite the thickness of the crust. Moreover, the moistness of the baked crust represents their skill of an experienced baker.
It has a mellow buttery aroma and a hint of sweetness and salt, and it may make you forget what the plain flavor is like because this natually tastes like the regular flavor. Perhaps the salt flavor is added to make it more refreshing than the plain flavor. Anyway it is a high-quality madeleine with a high level of perfection.
