Alias of Kumamoto Castle's stonewalls "Musha gaeshi", red bean pie

“Musha gaeshi” is made by Kobai in Kumamoto Prefecture and this is their representitive confectionary.  It has been lovered in local.

The product name “Musha Gaeshi” means to describe the construction of Kumamoto Castle’s stonewalls.  The stonewalls have a gentle slope at the bottom though, the higher up we go, it gets steeper and it is almost vertical until the top.  The curves is one of the main reasons why the Castle looks beatufiful.

The pie crust is folded into squares and baked to a golden brown.

The very fine red bean paste inside is peeled red bean pasts, which is made by kneading red beans after peeled their skins.

The silky texture of the bean paste and the buttery pie crust go well together. This confectionary is elegantly sweet and gives a sense of perfection and balance. Incidentally, Kobai is famous for confection called “Honorary Jintaiko.
