Shizuoka Matcha Dorayaki

Excellent balance between the bitterness of green tea and the sweetness of azuki beans.

Mataichi An in Iwata City, Shizuoka Prefecture, is a long-established confectionery established in 1871. While their signature confectionery is Kintsuba, they also make many sweets using tea, which is unique to Shizuoka.

“Shizuoka Matcha Dorayaki”, a bean jam filled pancake, is also a their confectionary used plenty of matcha green tea grown in Shizuoka.   According to a data from the Ministry of Agriculture, Forestry and Fisheries, Shizuoka Prefecture produced 25,200 tons of tea leaves in 2020, accounting for 36% of the nation’s total, making it the number one producer in the country.

The matcha-colored dorayaki crust has the texture of a fluffy pancake with a smooth surface.

There is plenty of azuki bean paste inside, and it is light in color and refreshingly sweet.

The balance between the dorayaki crust, having the matcha aroma and bittersweetness, and the refreshingly sweet red bean paste is superb. After all these years, those who discovered the combination of matcha and azuki must have been surprised at the compatibility. It is one of the greatest inventions ever created in Japan.
