Cookie sandwich created in the 1960s and still loved today

“Cheese cookies” is made by Kashian Ishikawa who was established in Ina City, Nagano Prefecture in 1920 (Taisho Era 9).

Kashina Ishikawa celebrated their 100th anniversary in 2020 and this is their signature product.  It gained popularity in 1960s and has been improved many times over and over since then.  It is very famus confectionary in Ina city, Nagano Prefecture.

It looks like a Bouchée, but it is a cookie sandwiched cream between them.

The cookies are so delicate and they can easily crumble when held tightly. The texture is exquisite, crispy and fluffy at the same time.

The cookie dough is very delicate and melds with the slightly salty cheese cream as it loosens in our mouth. It is a cookie sandwich made by the long-established confectioner and it is understandable taste beyond that of bouche dough.
