Shinnosuke Madeleine

Shinnosuke Madeleines, made by Niigata City confectioner Kikuya, are madeleines made with an abundance of Shinnosuke rice flour, a new brand of rice launched by Niigata Prefecture in 2017.
The packaging of the sweets also follows the red and white design of the rice “Shinnosuke”.
It is baked so fluffy that from the outside you would never know rice flour was used.
The texture is quite moist. I felt that this moistness was not due to butter or rum, but rather a property of the rice flour of the “Shinnosuke” rice.
It tastes like a madeleine, refreshing yet firm. I thought it might be like pound cake, but it has a rich and delicious flavor. The rice flour gives it a chewy texture, which is good!
