Shimo-Datami
Japanese notation "霜だたみ"
Rokkatei’s “Shimo-Datami” is a crispy chocolate pie. “Shimo(霜)” means ”Frost” in Japanese.
When you open the package and take it out, you will be surprised at how light it is.
Sandwiched inside is a generous layer of mocha white chocolate cream. The fluffy texture can be felt from the appearance.
I carefully cut it in half and took a picture of the cross section. The pie crust is incredibly delicate, with plenty of air in the layers, which is why the whole pastry is so light.
