Shimo-Datami

霜だたみ

I've never had a pie with such a light texture!

Rokkatei’s “Shimo-Datami” is a crispy chocolate pie. “Shimo(霜)” means ”Frost” in Japanese.

When you open the package and take it out, you will be surprised at how light it is.

Sandwiched inside is a generous layer of mocha white chocolate cream. The fluffy texture can be felt from the appearance.

I carefully cut it in half and took a picture of the cross section. The pie crust is incredibly delicate, with plenty of air in the layers, which is why the whole pastry is so light.

The texture is the ultimate in crispiness. The mocha white chocolate cream is also finished with plenty of air and melts in the mouth. This “Shimo-Datami” a pastry made with the image of the first frost on a cold morning, is definitely a pastry that expresses the delicacy of the image.
