Soka Senbei” has been a well-known specialty of Soka, located on the Nikko Kaido Road, since the Edo period.
Soka Kiraku Sembei Honpo, which has kept the tradition and continues to manufacture in the old-fashioned way, is a sembei shop with six stores around Soka City.
The large rice crackers are individually wrapped, and even a single piece is massive.
The characteristic of Soka rice crackers is that they are “katayaki” (hard-baked), made of 100% Uruchi rice and coated with a secret soy sauce.
I cracked it open and it is quite hard.
I was amazed that such a beautiful rice cracker could be baked with only Uruchi rice and soy sauce, and I could feel the tradition and skill of the chefs. It was a simple yet complete rice cracker.
