Ganryu-yaki
Japanese notation "巌流焼"
This is “Ganryu-yaki” dorayaki from Ganryu Honpo in Shimonoseki City, Yamaguchi Prefecture. The dorayaki is named after Ganryu Island, where the duel between Miyamoto Musashi and Sasaki Kojiro is said to have taken place, and as the powerful name implies, the dorayaki is very sturdy.
It is a chunky dorayaki with a standard form and a traditional disk shape.
”Ganryu-yaki” is a standard-looking dorayaki, but its most distinctive feature is this red bean paste.
The bean paste is white bean paste! This white bean paste, which is slowly kneaded and made from Hokkaido green beans, is the distinctive feature of this dorayaki.
The flavor of the bean paste, which is made from green beans, is different from that of azuki red bean paste, and the sweetness is refreshing.
It has a mild and elegant sweetness, though the texture of the grains remains firm. I found it to be very elegant, despite the battle of Ganryujima.
