Kakukaku (Yuzu Paste)

“Kakukaku” dorayaki is made by “Inaka Mochi Honpo Takeshita” in Yamaguchi Prefecture.  This is a sweet yuzu- flavored paste-filled pancake naming a difficulte to read without furigana.

By the way,  “Kakukaku” seems to mean “a bright red glow” or “a state of distinction, such as in achievements or reputation.” While their standard Ogura-an, red bean paste variety comes in a deep red package, this one features a refreshing green and yellow color scheme to match the yuzu theme. And, as always, the packaging is quite large for a single dorayaki.

The large, flat shape is the same as the standard product, and it also is stamped with a brand mark.

Also, while the dorayaki is known for their chewy texture, the yuzu-filled version is, of course, incredibly chewy as well.

The yuzu filling looks a bit like marmalade jam, and it really did feel like chewy pancake sandwiched with a citrus jam that had a refreshing sweetness. In fact, it is like this dorayaki  embodies a fusion of Japanese and Western styles. It is so delicious “Why not sell this as part of the regular lineup?”
