Mikan Soufflé (Koushindoh)

A refreshing, rich flavor of Setouchi Mandarin orange Soufflé

Koushindoh, a confectioner, located in Oshima District, Yamaguchi Prefecture, makes a wide variety of sweets using “mikan”, mandarin orange grown on Suo-Oshima. Their lineup includes mikan sweet bean jelly, mikan bean-jam-filled wafer, mikan sablés, mikan sweet bun, and other mikan-based confectionary other thank the Mikan Mikan Soufflé.

A sticker printed Mikan is applied on a simple package. The Mikan Soufflé is individually wrapped quarters, and the simple,  handmade-style packaging further reinforces its local charm.

The sponage cake has a virant color of Oshima mandarins

The aroma of mandarin oranges wafts from the fine-textured sponge cake.

This moist yet fluffy soufflé cake offers a vibrant sweetness with a rich flavor of mandarin orange juice. Amazing by the refreshed citrus notes, which make it seem like we could eat it endlessly, and the high quality of the soufflé itself.  We really sense the potential of the mandarin oranges grown in the mild climate of the Seto Inland Sea. It made me want to try some of their other sweets as well.
