Keyaki-michi

Looks bean jam filled pancake but different texture.
“Keyaki-michi(Zelkova Road)” is a bean-jam pancake made by Itoshige Confectionary Shop in Shiga Prefecture, where is famous for their representative confectionary “Umore-gi”.
Zelkova trees have been closely associated with humans since ancient times, and it seems that they were often planted as windbreaks, and we can often see rows of zelkova trees lined up in a row in various places in Japan. Such Zelkova Road may exist in HIkone city and the confectionary represents the scene.
A bright light green color. It looks like a dorayaki, bean jam filled pancake, but the texture of the sponge dough is so moist and fine-textured like a cake, wondering if it can be called as a dorayaki crust.
Upon further research, it seems that the sweet is called “Ukishima” and is a type of traditional Japanese confectionery. It is characterized by a moist sponge cake-like dough, and is often made into a square shape, but some are made like this dorayaki, filled with red bean paste.
Each one is hand-made and shows great care. The azuki bean paste is also moist and delicious with an elegant sweetness.
