Thorough chestnut madeleines with Kasama chestnut paste kneaded into the sweet

“Kuri-mado” made by Gruyere, a confectionery locates in front of Kasama Station in Ibaraki Prefecture, is madeleine using chestnuts grown in Kasama, where is famous for chestnut production.

Guessing “Mado” of the confectionary name is an abbreviation of madeleine, and the chestnuts of Kasama are clearly printed on the package.

The Madeleine baked in aluminum cups. It also has the feel of a cupcake.

The evenly baked dough is moist, yet quite dense and voluminous for its size.

The chestnut flavor is amazing, seeing the process of the make, the pasted chestnuts are kneaded into the dough and baked, that explains why the chestnut flavor is so rich.  This is a confectionary which we can enjoy the famous “Kasama chestnuts” of Ibaraki Prefecture.
