Feeling a new style of rice cracker sandwich

“Anko-Tenbei” made by Fujimido, a long-established confectionery more than 100 years headquartered in Katsushika-ku, Tokyo, has an unique concept of rice cracker sandwich.

Anko, red bean paste sandwiched between rice crackers is an original and unprecedented confectionery.

It looks like a Western-style biscuit sandwich, and it is interesting that their ingredients are totally typical Japanese such as rice crackers and red bean paste.

The rice crackers are firm and hard. The red bean paste looks like chocolate.  It is a little rough and sugar is mixed in.

The rice cracker is salty, but the red bean paste inside is sweet, and they create a sweet-salty harmony in the mouth. It is an interesting concept, and I feel that it has been made with a good balance of harmony. It is a confectionary created by the tradition and ingenuity of a rice cracker shop.
