Shio Monaka

Monaka made with "Mountain salt"

“Shio Monaka”, Salt wafter, a specialty of Oshika Village in Nagano Prefecture in Minami-Shinshu area, is bean- jam -filled wafers made with “mountain salt” which is a natural salt collected in the mountains there.

“Mountain salt” is extracted from the salt springs of hot springs locates in Shimoina County, Nagano Prefecture, and is characterized with containing extremely low magnesium compared to other made from seawater. It is mild and less bittern.

It is a rectangular monaca that can be folded in the middle.

The maountain salt mixed to pasted white bean jam and the monaka has a fine, crisp texture.

We can tastes mild maountain salt together with light sweetness in the pasted jam.  Such mild saltness can be utilized for many different cuisine.
