Cookies created from traditional natural salt from Kesennuma

Koyama Confectionery in Kesennuma City, Miyagi Prefecture, is a long-established confectionery shop with a history of over 130 years. The “Shio-an Cookie” made by such a long-established confectioner in Kesennuma City is a unique cookie that makes use of salt.

In the old days, Kesennuma was home to a saltworks directly operated by the Sendai clan, and salt production flourished there.

It is said to feature salt, and when opened, it looks like a normal cookie, thick and a bit moist in texture.

It is filled with a soft and fluffy red bean paste. This seems to be Koyama Confectionery’s signature “salted red bean paste.” These luxurious cookies are richly flavored with natural salt.

The moist, buttery cookie dough and red bean paste flavored with natural salt are exquisite. I thought the history of salt production in Kesennuma was beautifully incorporated into the cookies.
