Toyaman
Japanese notation "富也萬"
I bought “Tomiyaman” from “Libran”, a confectionery company that operates mainly in Toyama Prefecture. The company is also the confectioner that produces “Kankontan” a major souvenir from Toyama.
In the past, this confectionary has won the “Gold Prize” at the National Confectionary Exposition.
A pie crust folded into a rectangular shape appeared. Inside the pie was a red bean paste, or “Anko pie” as it is called.
The azuki red bean paste seen inside is light in color. This azuki red bean paste is the most distinctive feature of “Toyaman” and is called “Sarashi-An”, which is made by soaking the azuki beans in water for many times to remove ”harshness” and carefully removing the bean skin.
Delicious! The refreshing red bean paste and the feel of the pie are exquisite. The effect of this “Sarashi-An” is great. It is like an azuki bean paste with a silky texture, which is the first time I have ever eaten such a texture. The flavor of the azuki bean paste is fragrant yet elegantly sweet, a perfect match with the pie crust.
