Rokkatei’s Bitter Sweet Chocolate

“Rokkatei’s Bitter Sweet Chocolate” is the most bitter tasting of Rokkatei’s five chocolate series. The “Kitakobushi” depicted on the package is a tree that grows wild in Hokkaido and blooms earliest in early spring.
Although it is less conspicuous than White chocolate and Milk chocolate in the same Rokkatei’s chocolate series, there are many fans of its authentic cacao flavor.
Generally speaking, “bitter chocolate” has a cacao content of 60% or more, while “sweet chocolate” has a cacao content of around 55%. It is a tighter shade of cacao.
They do not use vegetable fats, but use plenty of high-quality cocoa butter for a smooth melt-in-your-mouth texture.
It has a bittersweet taste with a deep sweetness, and the flavor of good quality cacao seems to be directly tasted.
