Tsubame-sable
Japanese notation "ツバメサブレ"
I bought a “Tsubame(Swallow) Sable” made by Yamamoto Sataro Shoten in Gifu City, Gifu Prefecture. It is a “Japanese-style sable” baked with stone-ground Dinkel whole wheat flour, wheat, sugar, and rice oil.
The illustration of a Tsubame (Swallow) flying with a sable in its mouth and the package is very cute.
Although the bag contains 110 g, it feels quite voluminous.
It has a lot of whole grain grains in it. It is quite coarsely ground and also seems to be kneaded in large quantities. This sublet is rich in fiber and vitamin B1.
It is about 2 mm thick and has a crisp texture, but the surface is also moderately rough and fragrant.
I thought it would be a rather hard material, but it is crispy. By the way, it is free of eggs and emulsifiers.
The whole grains have a nice crunch and the natural sweetness of the epicate sugar is delicious. I feel like I’m getting a tremendous amount of fiber and vitamins and minerals from this.
