Madeleine (Kanda Seiyōken)

マドレーヌ(神田精養軒)

Madeleines that continue to be loved and revived like a phoenix

Kanda Seiyōken, a long-established confectionery store in Tokyo that regrettably went bankrupt in 2009, has revived its “Madeleines” and is now selling them.

Kanda Seiyōken was originally founded in 1949 as an independent bakery division of the ”Seiyōken Hotel”, which opened in the Meiji Era (1868-1912) and became independent after World War II. It mainly made madeleines, almond pits, creme puffs, and other baked goods, and was a popular store loved by many people for its high quality. However, in 2009, the business became difficult and went bankrupt, which must have been quite a disappointment for those who were fans of these madeleines at the time.

However, in recent years, only madeleines have become available in stores. I do not know the details of when it was revived, but I was skeptical when I saw the words “Kanda Kanda Seiyōken” written on the package, but when I opened the package, I found that the traditional shape has not changed! It used to be an aluminum cup, but now it seems to have been replaced by a paper cup.

When split in half, the pure white madeleine dough has a nice, fluffy buttery aroma.

It is still delicious! I find the sweetness, the buttery aroma of baked goods, the elegant cake batter, and above all, the balance is superb. It is a welcome return.
