Monaka-Sable
Japanese notation "藻なかさぶれ"
Baikado, located in Shiogama City, Miyagi Prefecture, is a very long-established confectionery established in 1918. It is a confectionery that has long been loved in Shiogama City. Last time I had “Higashi-Taiheiyō” made by “Baikado” and I was astonished by its deliciousness, but this time I am going to try “Monaka-Sable”, a cookie and monaka made with “Mo-shio” (salt from seaweed). What will it taste like?
The catch copy of the snack is written on the front of the package. The words, “The sea breeze gives a soft and gentle texture,” are quite unusual for a confectionery product.
The overall shape is a perfect square, and the skin side is cut so that it can be broken into four pieces and eaten as shown here.
On the reverse side, cookie dough is poured and baked. The cookie dough contains Shiogama algae salt, which is quite a bold idea to use algae salt in cookies.
By the way, when I looked up “Mo-shio” again, I found that it is a salt packed with the umami of seawater and seaweed.
It is a taste unlike anything you have ever had before. The cookie with a slight scent of seashore combined with the rustic skin of monaka (a type of fish cake) was a unique taste. It was a unique and original confectionary that could only be found in Shiogama.
