Yae
Japanese notation "八重(俵屋吉富)"
“Yae” is a traditional Japanese manju made by a very long-established confectioner, Tawaraya Yoshitomi, which was founded in 1755. The package design is decorated with the image of “Kyo-temari” which gives it a fragile and delicate Kyoto-like atmosphere.
The appearance is standard manju, and the texture of the dough is smooth.
Inside is a generous amount of koshi-an (sweet bean paste). The characteristic feature is the manju dough, which is thin but has a chewy feel. The chewy and elastic skin made of rice cake flour has a unique texture.
The koshi-an is very light and sweet with a refined taste, and the manju skin is very thin, but the texture is very chewy. When one thinks of chewy manju in Kyoto, one usually associates it with Ajari-mochi, but “Yae” is also a new type of chewy manju. It was an elegant yet modern manju, typical of Kyoto.
