Yokohama soufflé Dora
Japanese notation "横濱スフレどら"
This modern package is unique to Yokohama, but it is a “Dorayaki”. This is a new style of dorayaki made by Ariake, a company famous for Yokohama Harbor.
The “towers” on the package depict “The Tale of the Three Towers of Yokohama”.
The three towers are
・Jack’s Tower (Yokohama Port Opening Memorial Hall)
・King Tower (Kanagawa Prefectural Government Office)
・Queen Tower (Yokohama Customs House)
The three towers were nicknamed “Jack Tower,” “Queen Tower,” and “King Tower” by foreign sailors who saw them as the Jack, Queen, and King of cards, respectively. Incidentally, there is a legend that if you visit these three spots in one day, your wish will come true.
The most significant feature of this dorayaki is that the dough is a soufflé batter.
Compared to ordinary dorayaki, it has a flat shape and the dough seems denser. The texture of the dough is also a bit different. Since it is called “soufflé,” it seems to contain butter and has a fluffy, Western-style atmosphere.
The dorayaki dough is evenly thick and dense.
Delicious! I really like the texture of the crust. In recent years, there has been a trend toward moist and chewy dorayaki, but I really like this one too. This is a modern concept of dorayaki that is very Yokohama-like.
