Senju Dorayaki
Japanese notation "千寿どらやき"
“Senju Dorayaki” a dorayaki with a distinctive wave-shaped dorayaki crust, is a product of “Kogetsu(鼓月)”, a long-established Japanese confectionery with its main store in Kyoto. The store is famous for its Senju Senbei rice crackers. Senju Dorayaki” is a sister product of “Senju Senbei.”
It is about two times smaller than the size of a typical dorayaki. It is the size that you can hold in the palm of your hand.
The dough is quite soft and fluffy. It has a cake-like texture that is much softer than typical dorayaki dough. The dough is kneaded with honey and has a strong moist texture.
It has two layers of sugar cream and red bean paste, with sugar cream and mashed red bean paste overlapping each other.
Cross-section from the side, I feel that the dough has a Danish-like texture.
The combination of red bean paste and sugar cream is exquisite. The dough is more like a cake with a light texture than a dorayaki crust, and I wonder if there is a little brown sugar in it. It had a rich sweetness. It is a new style of dorayaki.
