“Senju Senbei” by Kogetsu in Kyoto is a historical confectionery that has been sold since 1963. The reason for the creation of this characteristically shaped waffle dough was very interesting.

This shape was born when the store’s craftsman purchased a machine to make a new pastry and mistakenly purchased a German-made barbecue machine.

I thought it was a very Japanese episode to apply it to the production of waffle dough and create a new confectionery.

Inside is a generous amount of sugar cream, a good, moderately sweet cream.

The waffle dough is soft and cookie-like with a simple sweetness. I thought it was a unique experiment to call it “senbei” at the time.
