Ritsuami
Japanese notation "栗阿彌 "
“Ritsuami” is made by Wakanaya, a Kyoto chestnut confectioner, estalished in 1927 in Kyoto, and is made from chestnuts with astringent skin in the style of chestnut natto. Wakanaya seems to mainly use chestnuts for their confectionary and have an image of being an authority on chestnut confections in Kyoto.
It is a simple yet essential confectionary that brings out the best of the chestnuts themselves.
As we can see, it looks exactly like a chestnut itself peeled off the outer skin. It has a little bit of sugar around it, which gives it a Japanese confectionery feel. Without sugar coat, it might look like just chestnut nuts.
The cross section of the chestnut is exactly like a chestnut, and the moist texture and increased transparency of the chestnut give it a marron glacé-like atmosphere.
The chestnuts are simply soaked in honey and wondering how can it tastes so good!? It is so perfect confectionary. This is well balanced to be created after went through numerous trials and errors and traditional techniques. It is a Japanese confectionery that draws out the full potential of chestnuts.
