Tochimochi
Japanese notation "とちもち (みのりや)"
“Tochimochi” is made by Minoriya, a Japanese confectionery located in Tsuruoka City, Yamagata Prefecture. Tochimochi, made from horse chestnuts, has been popular for a long time in Tsuruoka City, Yamagata Prefecture. We had another Tochimochi made by Daifukujo , the other Japanese confectionery in the same city before.
“Tochi” is a nut that has been used for medicinal purposes since ancient times, and it has a very strong astringent taste that requires careful removal of the astringent taste. It is said that it takes more than half a month to remove the astringency and requires a high level of skill, making it a very time-consuming process before it can be used for a food ingredient.
It is round shpae and heavy.
It is easy to cut in half with a knife comparing to a general rice cake, very unique texfutre as a rice cake less stickiness.
There is plenty of koshi-an, red bean paste filled in and its light-colored paste is refreshingly sweet. The savory aroma of the tochimochi goes well with the crisp texture.
