Sake-Bushimaru
Japanese notation "鮭ぶし丸"
“Sake-Bushimaru” is made by “Ryugetsu” based in Kawato-gun, located in the central part of Hokkaido. Ryugetsu is also famous for their baumkuchen “Sanpōroku” and is a major player in Hokkaido’s souvenir confectionary scene.
Salmon shavings, an ingredient that has become a hot topic in recent years, is kneaded into the rice cracker in abundance.
You can see that the Sake-bushi(salmon flakes) is kneaded into the paste like speckles.
“Sake-bushi” are a new food material created in Hokkaido in recent years, containing more than three times as much glutamic acid and aspartic acid for umami as bonito flakes, and more than twice as much glycine and alanine for sweetness as scallops and shrimp.
This rice cracker is made with salmon, which is unique to Hokkaido. The crispy texture is covered with a sweet and spicy sauce, and the strong flavor of the salmon is delicious. It was a great snack with beer.
