“Mikasa-yama” made by  Sasaki Chitose-dō in Toyama City, Toyama Prefecture, is said to be the store’s signature dorayaki, with a lineup of 13 varieties available at any given time. This time I bought the most standard one is “Ogura-an” (sweet bean paste).

The package seems to include a poem about Mt. Mikasa written by Abe-no-Nakamaro in the “Kokin Wakashū“.

It is a standard dorayaki shape, but the dough is soft and fluffy.

They seem to be very particular about the bean paste inside, researching and adjusting the flavor to suit various dorayaki.

The light-colored Ogura-an has a mellow sweetness that goes well with the thick skin. It was like a dorayaki with a flavor that brings out the best of the ingredients.
