Shell Leines Aosa-nori

Well-established madeleines with the aroma of the sea and seaweed

The “Shell Leines” series made by Blanca in Toba City, Mie Prefecture, are madeleines in the shape of pearl oysters, a well-known specialty of Ise-Shima. The Shell Leines are known for their deliciousness, and I bought one with “Aosa Nori” (seaweed) kneaded into the dough, which is harvested in Ise-Shima.

On the package are the words “Aosa Nori” written in a Japanese font. This must be the world’s first attempt to knead “Aosa Nori” into madeleines.

The shape of the pastry is the same as that of the Shell Leines, but green spots can be seen in some places.

Inside, you can see that a good amount of “Aosa Nori” has been kneaded into the dough.

The buttery flavor and the seaside aroma of the “Aosa Nori” go surprisingly well together. The eggs are locally produced in Toba, and the flour is “Ayahikari” flour from Mie Prefecture. It was a quality that reminded me again of the high level of Shell Leines.
