Yawaraka-Yaki
Japanese notation "やわらか焼"
The “Yawaraka-Yaki” made by “Kameido Sohonten” founded in 1873, which is famous for its “kawara senbei” in Kobe, Hyogo Prefecture, is characterized by the size of each piece.” The size of the cracker is very different from kawara senbei, which was created from the desire to make a kawara senbei that does not break
When measured, it is about 15 cm in diameter. The “Kikusuimon” on the Yawaraka-Yaki looks like the family crest of “Masanari Kusunoki” on the kawara senbei.
It was about 1 cm thick, slightly thicker on the outside than in the center.
It has a simple taste of sponge cake dough. I was impressed by the fact that the same ingredients as ”kawara senbei” are used, but baked in a different way, resulting in a completely different snack.
The sponge cake batter feels like a large pancake. It was rustic sweet, hearty and delicious.
