Dora-don
Japanese notation "銅鑼殿"
I bought a dorayaki called “Dora-don” made by “Satsuma Steam Shop” in Kagoshima City, Kagoshima Prefecture. Satsuma Steam Shop is famous for making many traditional Kagoshima sweets and also for making “Kasta-don“.
There is a theory that the name “Dorayaki” comes from its similarity in shape to a “Dora (gong)” a musical instrument, so it seems like a fitting name for Dorayaki.
The branding mark “circle and cross” stamped on the top is said to be based on the family crest of the Shimazu clan of the Satsuma domain, and is used as the symbol of Satsuma Steamers.
It contains standard tsubu-an (sweet bean paste). The dorayaki crust is also compact, but small and well-balanced in appearance.
It was a “Doradon” an unmistakably delicious dorayaki that seems to be a compact realization of all that is required of a Dorayaki.
