Fu-fu-fu Baum
Japanese notation "富富富ばうむ"
“Fu-fu-fu Baum” is made by “Sasaki Chitose-do”, a confectionery shop that has been in Toyama City for nearly 60 years. “Fu-fu-fu” is the name of Toyama Prefecture’s brand of rice that has been on sale since around 2018. It is a variety that overcomes the weak points of Koshihikari rice, such as resistance to high temperatures and disease and resistance to collapse, and the area planted has been increasing in recent years.
The name “Fu-fu-fu” sounds catchy and interesting. It is a bite-sized baumkuchen.
And this baumkuchen is unique in that it is made from “Fu-fu-fu” rice flour.
When cut in half, it has a very moist dough texture and a brandy aroma. It’s like a bite-sized baum made with the soul of a new brand of “Fu-fu-fu” rice flour, and very carefully crafted.
This baumkuchen has a very luxurious taste when eaten. It is rich in brandy and has a chewy texture unique to rice flour compared to dough made from wheat flour.
Like “Shinnosuke Madeleines” from neighboring Niigata Prefecture, this was a new brand of rice confectionery. I am looking forward to seeing more and more sweets made with rice flour in the future. It will be a category where we can compare the taste of each brand of rice from different regions and find the unique Japanese particularities and enjoyment.
