Shirakaba Yokan

Japanese notation "白樺羊羹"
Rokkatei’s “Shirakaba-yokan” in Hokkaido is a yokan that I personally have had since I was a child, and it is a confection that holds fond memories for me.
”Gokatteya Yokan” is also famous for its cylindrical yokan that is cut with a string, but it was Rokkatei’s Shirakaba Yokan that I became familiar with as a child.
I remember that I loved it anyway because it had a refreshing sweetness like a mizuyokan (a sweet bean jelly).
Gokatteya Yokan is a little more original and thick, while Shirakaba Yokan is more like a light Ogura-an (sweet bean paste).
I used to eat it by keeping it in my bag and cutting out slices. In my mind, it is my favorite candy, like a portable yokan with active specifications.
