Kashiwazaki Tai sable

”Kashiwazaki Tai Sable” made by Mogamiya, a confectionery store in Kashiwazaki City, Niigata Prefecture, is a butter sable shaped like a sea bream. The round shape of the sea bream is very cute.
The shape of the tai sable is round, but the pattern used to represent the tai is quite elaborate, and the scales are well drawn.
The eyes and mouth are well formed, expressing the snapper’s character. When zoomed in, the “coarse salt” sprinkled on the sable stands out.
When split in half, the sable is quite soft. It does not feel crispy, but rather moist and cookie-like.
It is luxurious, and butter is used considerably. The rich butter, egg and flour flavor, and the coarse salt also come together to create a salty taste with a rich, soft sweetness.
