Shinshū Ueda Soba-Batake
Japanese notation "信州上田そば畑"
“Shinshu Ueda Soba-Batake” made by Takeda Seikaho in Ueda City, Nagano Prefecture, is a baked confection made with a monaka dough skin like a plate, into which are poured cookies made with plenty of buckwheat seeds.
There are many confectionery shops in Nagano City that use buckwheat, a specialty of the city, but “Shinshū Ueda Soba-Batake” has a particularly unique structure.
It is good and functional with a line in the middle to make it easy to split in half and eat.
When you break it in half, you can see that it is filled with buckwheat seeds. You can also smell the mellow aroma of buckwheat.
I was a bit surprised at how well the crunchy buckwheat cookie and the skin of the monaka went together.
The cookies have a rustic flavor despite being cookies, and the buckwheat aroma is gorgeous, and I found them to be quite a perfect confection.
