Tefūkin-no-Sirabe

“Bizenya” that main store is located in Okazaki City, Aichi Prefecture, is a very long-established confectionery shop that has been in business for more than 230 years, since its founder established a confectionery shop in the Tokaido Denmajuku of the Okazaki Domain. I bought “Tefukoto-no-Shirabe” a popular product of “Bizenya”.

The top of the pie crust is also browned, but if you look at the sides, the pie crust has a translucent look. It looks like a box of square pie dough wrapped in a furoshiki (wrapping cloth).
The pie crust has more layers than expected. It has a whopping 144 layers of pie crust. The name “Tefū-kin” (accordion) seems to have come from the fact that the layers of pie crust look like the bellows of an accordion.
The pie crust has just the right amount of sweetness with a delicate yet hearty texture. It is strangely light on the palate and has a subtle sweetness that is exquisite.
