Bouchee with Echigohime strawberries jams

The “Niigata Sampo-michi (Walkway)” made by the Niigata City confectioner “Kikuya” is a bouchee sandwich that uses a lot of strawberries grown in Niigata called “Echigo-hime.”
It is a brand of strawberry characterized by its strong aroma and sweetness, and its low acidity makes it very flavorful and sweet when made into jam.

The dough of the bouchee is crispy on the outside, well baked, and dusted with powdered sugar.

When cracked open, the Echigo-hime jam sandwiched in the bouquet appears. The color is more natural than I had imagined and conveys a handmade feeling.

The strawberry jam with a little bit of Echigo-hime pulp is sandwiched between the strawberry jam and soaked into the dough of the bouchee.

One bite and you can feel the mellow strawberry aroma and sweetness directly coming through. The simple taste is a good thing because they are confident in their strawberries! I quite liked the taste of this bouchee.
