Mansaku
Japanese notation "万作(まんさく)"
Rokkatei’s “Mansaku” is another of Rokkatei’s long-time favorite confections.
I was surprised when I opened it and found that it was different from the “Mansaku” I had remembered. I used to remember it as a manju with sweet potato filling, but this looks like a cupcake. I found out that it was reborn as a completely different confectionery in the spring of 2020. I was surprised to hear that it will be reborn as madeleine cake with plenty of lemon.
Even before you eat it, you can smell a soft citrus aroma wafting from the entire pastry. The top seems to be made of hardened sugar syrup, which also has a lemon-like aroma.
There is also some kind of fruit or jam in the cake, which adds a nice citrusy sweetness to the cake. Of course, I liked “Old Mansaku” which was an old manju, but “New Mansaku” is also delicious! What can I say, it is a citrus cake with a good balance of various ingredients and very high perfection.
