Kimamori
Japanese notation "木守(きまもり)"
“Kimamori” is a famous confectionary made by “Sanyūdo”, a very long-established confectionary shop established in 1872 in Takamatsu City, Kagawa Prefecture, and has been loved in Takamatsu for over 100 years.
The store name “Sanyūdo”(“Sanyu” written in Kanji characters means ”three friends” ) comes from the fact that three fellow samurai started a Japanese confectionery business when the Takamatsu Domain was abolished due to the abolition of the han system at that time, which is a very nice origin for a store name.
The name of the confectionery, “Kimamori” refers to the only fruit left on a persimmon tree in late fall in hopes of a bountiful harvest the following year, which is a very stylish Japanese wish.
This light-textured rice cracker is called “fu-yaki senbei” because it is as light as fu (wheat bran). The most important point of this snack is the “persimmon yokan” (sweet jelly made from persimmon), which is sandwiched inside the rice cracker, although it looks like red bean paste.
This yokan has a strong persimmon flavor. This is the first time I have tasted it, but it has a fairly robust persimmon flavor. It even tastes like eating dried persimmons. It is a traditional confectionery that has been enjoyed for a long time.
