Kinu-nishiki
Japanese notation "きぬにしき"
“Kinu-nishiki” made by Nissho-Do, a long-established Japanese confectionery established in 1937 in Nikko, Tochigi Prefecture, is a very traditional confectionery that has been presented to Nikko Toshogu Shrine.
The package has a sticker on it that reads “Presented to Nikko Toshogu Shrine” emphasizing the traditional Tochigi confectionery.
Upon opening the package, I found a type of pastry I had never seen before, a small dorayaki (?). The outer dough is moist but feels like a pancake cooked a little harder.
The dough seems to be made in a slightly Western taste, but the high-quality anko (red bean paste) sandwiched between the dough and the dough is a blend of Japanese and Western flavors.
The rustic taste of the dough is a perfect match for the Ogura-an (sweet bean paste). It was like a mini pancake with red bean paste, so to speak.
