“Toritama Baum” made by Izumo Farm in Yamaguchi City, Yamaguchi Prefecture, is a gluten-free baumkuchen. It is surprising that it is gluten-free despite being a baumkuchen.
Children who cannot eat baumkuchen due to wheat allergy or other reasons can also eat this snack safely, a wonderful concept.
Instead of wheat flour, 100% domestic rice flour is used, and the egg yolks are from eggs raised by Izumo Farm.
This baumkuchen is a beautifully colored baumkuchen. Izumo Farm is able to produce sweets using almost all of their own ingredients, which is a true testament to the power of the farm.
The texture of the baumkuchen is so fluffy and firm that it is hard to believe that no flour is used. Also, perhaps because rice flour is used instead of wheat flour, the overall flavor seems lighter. This is a fine quality baumkuchen and delicious.
