Casdoce
Japanese notation "カスドース"
“Tsutaya” in Hirado, Nagasaki Prefecture, is the oldest confectionery shop in Kyushu and was founded in 1502, which is amazing.
Tsutaya’s “Casdoce” is a confectionery with a very long history. It is said to have been introduced by Portuguese missionaries in the Edo period (1603-1868), and since then, it has been loved by the people of Hirado for over 400 years.
Out of the luxurious black and gold box came a very modern confectionary. I read the pamphlet explaining the sweets included in the box and was amazed at the depth of the history of the “Casdoce”.
This is a “Casdoce” It looks as if it is glowing gold.
This confectionery, made with eggs and sugar, which were precious commodities at the time, was called “fantastic confectionery” that only the lords could eat.
Sponge dough dipped in molasses and coated with egg yolk on the outside, what a luxurious pastry!
The sponge dough is coarser and lighter in texture than sponge cake, but soaked with egg yolk and plenty of honey, it has a rich flavor and is topped with pomegranate, making it a truly luxurious confection. It is no wonder it was said that in the Edo period, only a lord could eat it.
